Vegetarian Snacks For Winter Evenings Of Kartika Maasa

It’s Kartika Maasa in the Odia calendar and so it is the onset of winter. As the mercury starts to dip, cool and pleasant evenings call for piping hot snacks with friends and family. While the love of Odias for non-vegetarian dishes is no secret, Kartika Massa calls for abstinence from meat. With so many budding chefs and food curators around, there are a plethora of vegetarian options for everyone.

Gone are the days when vegetarian dishes were considered boring. Food enthusiasts have started experimenting and playing with ingredients to come up with playful new dishes. Cooking has emerged as one of the recent crazes and almost everyone can be seen posing with kitchen utensils and cooking something flavoursome. Instagram and other social media are flooded with interesting and tantalising recipes and blogs.

Chef Biswajit C Moharathi commonly known as @_chef.b over Instagram is half Bengali and half Odia which makes his heart call for creating a fusion of both the cuisines. Biswajit reached the top 40 on Masterchef India Season 6. He will soon be launching ‘My Cloud Kitchen’ which is a one-stop solution for all food problems.

One of his favourite vegetarian snacks is the Mushroom Parcel where mustard sauté mushroom is stuffed in pumpkin leaves and pan-fried which is almost like chhatu besara in paturi. This is a must-have for winter evenings. One can enjoy it with a cup of tea or coffee.

Chef Avinash Patnaik is known as a Recipe Curator and Food Stylist and is famous for his uniquely curated recipes. Avinash is better known as @bhukadinsan and said to My City Links that he loves experimenting with new dishes and cooking is not only a passion but it is a joy for him to serve others with love.

Avinash suggests some of his favourite vegetarian snacks that one can have in the mornings as well as the evenings. His favourite is Bread Pakoda. It can be easily prepared at home and served instantly with your preferred sauce or dips. Another one of his go-to snacks is Atta Pockets. It is prepared using vegetables as the filling and wheat flour covering. It can be plated with your favourite chutney or sauce.

Another one of Avinash’s favourites is Chole Kebab which is easy to make, full of nutrients and very appetising. The patty can be used as a stuffing for sandwiches and burgers as well.

Young Chef Amol Mohanty (@amolmohanty) is a foodie who dreams of becoming a renowned chef. Amol’s favourite vegetarian snacks is Khichdi Arancini which is prepared from leftover khichdi mixed & mashed with spices, onion, green chilli & achaar. His version is a desi take on this Italian delight.
